Creamy saffron pasta

For 2 persons

ingredients

  • 2 cloves of garlic
  • 1⁄2 onion
  • 2 cups of spinach
  • 12 jumbo shrimp
  • 1 cup of your favorite pasta
  • Water
  • Salt and black pepper
  • Extra virgin olive oil
  • 1⁄2 tsp Niida saffron
  • 1⁄4 cup of white wine
  • 1⁄2 cup of greek yogurt

Method:

  1. Grab the gloves of garlic and finely mince them and do the same to the onion, for better texture, remove 2 of the outer layers. Measure out 2 cups of tightly packed bagged spinach and move to a cutting board to chop it. Now, grab the shrimps if they’re peeled and deveined, if they’re not, cleaned before the next step. With the cleaned shrimps, pat them dry with paper towels.
  2. Season the shrimps with salt and freshly black pepper, let the spices make their work and start to watch for your favorite kind of pasta.When you have it, take a cup of pasta and fill a saucepan with water to little over half, add generously amount of salt to remove the excess of starch from the pasta and a drizzle of extra virgin olive oil so it does not stick, and heat it with high heat.
  3. Meanwhile, let’s start with the sauce. Take a nonstick frying pan and put it on medium heat, add 2 tablespoons of extra virgin olive oil and 2 minutes later add the shrimps to the pan. About 90 seconds later, flip the shrimp to cook the other side. After 3 minutos of total cooking time, remove the shrimp from heat and reserve in a bowl. You’re gonna need to keep the shrimp warm, so cover the bowl with foil paper.
  4. Using the same pan where we cooked the shrimp, add the diced onion and minced garlic to mix with the oil for 3 minutes, after this time add 1⁄2 teaspoon of saffron threads and season with salt and freshly cracked black pepper and, again, mix together, add a 1⁄4 cup of white wine and mix. At this time, probably the water is going to boil so add the pasta to the saucepan.
  5. 2 minutes after adding the wine, add the spinach into the pan, place a lid on top and lower the fire to a low heat for 2 minutes before removing the lid. Season with salt and black pepper, turn off the heat and mix together. Now the pasta may have been cooking for 9 minutes so take off from heat and drain the pasta, you can let the pasta cool itself or use water to cool down faster.
  6. Come back to the sauce and add 1⁄2 cup of greek yogurt at room temperature and season with salt and black pepper. Now slap on the shrimps and mix everything together until well combined, then add the pasta and mix together for the last time to prepare this dish. Now, that pasta is ready to serve and enjoy.

    Probably looks like a difficult way to cook pasta, but it’s easier than it looks.👌🏻
